3 large eggs
2 tbsp butter, divided into two
3 to 4 strips of bacon
2 large flour tortillas (or 4 smaller flour tortillas)
1/2 cup shredded mozzarella cheese
Salt and pepper
Guacamole and salsa for serving
Whisk the eggs in a small bowl. Add one tablespoon of butter to a medium skillet over medium heat. Once the butter begins to melt, add the eggs, stirring until cooked. Season with salt and pepper.
Place the uncooked bacon in a large skillet over medium heat and cook until crispy.
Remove the bacon from the pan and and place on a paper towel to absorb any excess fat.
Place tortillas on a flat surface. Spoon eggs over half of each tortilla; sprinkle with cheese and small pieces of bacon. Heat the remaining tablespoon of butter in a skillet over low heat. Cook the quesadillas on each side for 2 minutes, or until cheese is melted.
