Italian Fruit Toast by Giada


  • Eight 1/4-inch slices ciabatta, cut on the bias
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup plus 1 tablespoon sugar
  • 2 cups ricotta, at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 2 1/2 cups mixed fresh berries or fruit of your choice
  • Honey, for drizzling
  • Flaky sea salt, for sprinkling


  1. Brush the ciabatta slices on both sides with olive oil, then sprinkle both sides evenly with 1/4 cup of the sugar, gently rubbing it in.
  2. Heat a large skillet over medium heat. Place the sugared bread in the skillet and cook until golden brown and caramelized on both sides, 2 minutes per side. Remove to a wire rack to cool briefly.
  3. In a medium bowl, mix together the ricotta, vanilla and the remaining 1 tablespoon sugar with a rubber spatula. Divide the mixture among the toasts and spread evenly. Top with berries, drizzle with honey and sprinkle with flaky sea salt.
